TEQUILA & LIME CHICKEN

Okay, I know what you’re thinking but trust me on this one! This Tequila & Lime Chicken is super delicious & oh so tender.
It has a very mild tequila taste so if you’re not a tequila lover, I promise you are going to enjoy this. The chicken isn’t too spicy for those who can’t handle the heat, but for the heat lovers, feel free to add in more spices. This is a great meal to share with family & friends & if you’re hosting, its really quick & easy to make minus the marinating time.
I had some leftover gold tequila (Reposado – Tequila aged between 2-12 months in oak barrels) from New Years celebrations so I used it for this recipe – you can use silver (Blanco – bottled immediately following distillation, some are aged for a short period of time).
Tequila & Lime Chicken Ingredients:
- 2 chicken breasts
- zest of 1 lime
- juice of 1 lime
- ½ teaspoon salt
- 1 tablespoon chili powder
- ½ teaspoon cumin (jeera) powder
- 2 teaspoons crushed garlic
- 2 tablespoons olive oil
- ¼ cup tequila
- 2 tablespoons vegetable oil
- freshly chopped (coriander dhania) for garnishing
Method:
- Zest the lime & set this aside as it will be used for garnishing.
- Rinse the chicken breasts & place into a bowl.
- Make a few incisions in the chicken breasts using a knife. This will allow the spices to soak into the chicken.
- Add in the salt, chili powder, cumin (jeera) powder & crushed garlic.
- Pour in the olive oil.
- Remember the lime from the beginning? Squeeze the juice of the lime into the chicken.
- Next, pour in the tequila.
- Mix until the chicken is well coated.
- Allow the chicken to marinate for a minimum of 2 hours.
- Once the chicken has marinated, heat the vegetable oil in a pan & add in the chicken.
- Fry the chicken until golden on each side. Approximately 3-4 minutes frying time on each side.
- Lay foil onto a baking tray & grease with a little spraying oil.
- Thereafter, place the chicken over.
- Bake the chicken in the oven for 10 minutes at 180° Celsius.
- Slice the chicken – look at how succulent that is!
- Go ahead & plate. Garnish with the lime zest & freshly chopped coriander (dhania).
- I served my Tequila & Lime Chicken over Risotto with some lime wedges, It can also be served with savoury rice, over mashed potatoes or it can be used as a filling for tacos, burritos, wraps & more.
- The chicken is absolutely moist & delicious & will leave you wanting more.
