These Eet Sum Mor Copycat Biscuits are such a close resemblance in taste to the original biscuits (cookies).
The Eet Sum Mor Biscuits hit the South African market in approximately 1940. Mr Albert Baumann & his cousin Mr Otto Baumann worked together in finding a biscuit that resembled a shortbread. Albert wanted these biscuits to be prepared using a machine instead of by hand, as many other shortbread’s are made by hand.
The name Eet Sum More came about when Mr Albert Baumann consumed one of the samples of this shortbread biscuits & stated that it was very tasty, he had continued to state that once you had eaten one you wanted to eat some more, so then he came to a conclusion of naming the biscuit “Eat-some-more”.
This shortbread biscuit is one of South Africa’s favourites. If you’re abroad & are craving this South African treat then you should definitely try out this recipe.
Eet Sum Mor Copycat Biscuits Ingredients:
- 250 grams butter or margarine
- ½ cup vegetable oil
- 1 cup confectionery (icing) sugar
- 2 tablespoons milk powder (I used the Klim brand)
- ½ cup corn flour (maizena)
- 1 teaspoon vanilla essence
- 3 cups all-purpose or cake flour
Method:

- The butter or margarine should be at room temperature.
- Preheat the oven to 180° Celsius.
- To a mixing bowl, add the butter/margarine & the confectionery (icing) sugar.
- Cream together using a wooden spoon or an electric mixer.
- Pour in the vegetable oil & vanilla essence.
- Mix together. The mixture should be a little clumpy.
- Add in the all-purpose or cake flour & corn flour.
- Add in the milk powder. Many have asked if this can be substituted or omitted, it can be omitted but I recommend adding milk powder as it gives the biscuits a rich taste which makes them very similar to the real Eet Sum Mor biscuits.
- Roughly mix with a wooden spoon.
- Next, use your hands to form the mixture into a biscuit (cookie) dough.
- To shape these biscuits I will be using a 6cm square cutter – feel free to use smaller cutters to resemble the Eet Sum Mor biscuits.
- I have divided the dough in half & placed it onto a floured surface.
- Slightly flatten the dough with your hands.
- Use a rolling pin to roll out the dough – it should about a centimeter in thickness.
- Use the biscuit (cookie) cutter to form the shapes.
- Use a knife to gently lift up the shapes.
- Place the shaped dough onto a baking tray.
- Do the same for the other half of the dough & don’t forget to re-roll the scraps of dough – no waste here!
- Now if you do not have a cutter, the shapes can be formed by placing the entire dough onto a surface & shaping it into one giant square.
- Cut the dough into 3 logs.
- Individually wrap the 3 pieces of dough into cling wrap (saran wrap), shape them into square logs & freeze them for 30 minutes (½ an hour) or refrigerate for 1 hour.
- After they have cooled into the shape, remove from the freezer/refrigerator & set on the counter. It’s best working with one log at a time. Remove the cling wrap. Using a finger width space, slice the cookie dough. This will form squares.
- Place the square shaped dough onto a baking tray.
- Bake for 10-15 minutes at 180° Celsius until very lightly browned.
- Once they have baked, allow them to cool for a bit on the baking tray as they will be quite fragile, thereafter, carefully place them onto a cooling rack to cool completely & firm up.
- Once cooled, these Eet Sum Mor Copycat Biscuits can be served.
- They are so delicious & can be stored in an airtight container for up to a month.
