DEBONAIRS CHICKEN & MUSHROOM SUBS

 


This Recipe Makes 6 Subs


 

I don’t know how many of you noticed but the subs from Debonairs have been discontinued (been a while now). I used to love their subs so I decided to recreate it, my favourite being the Debonairs Chicken & Mushroom Subs – If you haven’t tried it then head into your kitchen as soon as you can & start prepping.

These subs make for really delicious lunches, quick dinners & it’s also perfect for those fussy eaters.

They are super easy to prepare & is also great for game nights. If you don’t have an oven, simply pop them into your air fryer.

 

Debonairs Chicken & Mushroom Subs Ingredients:

  • 2-3 chicken fillets
  • ½ teaspoon salt
  • 1 tablespoon chicken spice
  • 2 sprigs thyme
  • 1 teaspoon ginger & garlic paste
  • 1 teaspoon vegetable oil
  • water as needed
  • ½ onion
  • ± 6 mushrooms
  • 1 tomato
  • 1 cup cheese of your choice
  • 6 hot dog rolls or 30cm baguettes
  • 5 tablespoons mayonnaise

Method:

  1. Rinse the chicken fillets.
  2. Debonairs Chicken & Mushroom Subs
  3. Add the fillets to a small pot on medium heat.
  4. To the chicken, add salt, chicken spice, ginger & garlic paste, thyme & vegetable oil.
  5. Pour in enough water to allow the chicken to steam.
  6. Give it a stir.
  7. Cover with a lid & allow the chicken to steam for 5 minutes.
  8. After 5 minutes, turn the chicken over.
  9. Cover once again & allow to steam for another 5 minutes.
  10. Thereafter, turn off the heat, the chicken should be thoroughly cooked.
  11. Place the chicken into a big bowl, discarding the excess water.
  12. Using two forks or a shredder, shred the chicken.
  13. Once the chicken has been shredded, set aside to cool.
  14. Whilst the chicken cools, bring out the mushrooms. I’m using button mushrooms but feel free to it up for your preferred choice of mushrooms.
  15. Peel & slice the mushrooms.
  16. Peel & finely chop the onion.
  17. Rinse & finely chop the tomato.
  18. Grate the cheese of your choice. I have used Gouda (Mozzarella works well too or a mix of both Gouda & Mozzarella).
  19. Once the chicken has cooled, it’s time to start mixing everything together.
  20. To the cooled shredded chicken, add in the chopped onion & tomatoes.
  21. Add in the sliced mushrooms.
  22. Thereafter, add in the grated cheese.
  23. Finally, add in the mayonnaise. Unfortunately, I have no idea as to what white sauce Debonairs uses in their dishes & mayo is the closest to the taste.
  24. Mix until everything is well combined.
  25. Next, bring out the rolls. I am using store bought but if you have the time you’re welcome to make it from scratch (homemade bread rolls).
  26. Slice the hot dog rolls or the baguette if you have that on hand.
  27. Fill the rolls up with the chicken mixture.
  28. Place the rolls into a greased casserole or baking tray if you are using the oven.
  29. Alternatively, pop them into the air fryer basket – I have used my Instant Vortex Air Fryer.
  30. Place the casserole or baking tray into an oven & bake these subs for 20 minutes at 80° Celsius until the cheese has melted. Make sure they do not get too browned.
  31. For the Air Fryer, select the “Air Fry” button & set the time to 4 minutes & temperature to 171° Celsius.
  32. Once done, they should be crispy & delicious.

  35. I personally prefer the air fryer ones as it takes less time & they do not get too crispy.
