BEEF CHOW MEIN
This Recipe Serves 2-4
This Beef Chow Mein is so simple to make & is ready in no time. It has a combination of beef, vegetables & egg noodles, making it a light, healthy & delicious meal.
I used fresh egg noodles in this recipe so I did not need to boil them, if you have the ones that need boiling then go ahead & cook them just after marinating the beef. I’ve also used pre-cut vegetables but feel free to buy them whole & julienne them.
This meal takes up so little time so it’s perfect for weeknight dinners or even a meal for chilled weekends. It isn’t a spicy dish so it’s definitely kid friendly but if you like the heat then feel free to adjust this recipe accordingly. Also, if you want a vegetarian option, simply omit the beef.
Beef Chow Mein Ingredients:
For The Beef:
- 250 grams beef fillet (sirloin or chuck)
- ½ teaspoon salt
- 1 tablespoon corn flour/starch
- 1 teaspoon chili flakes (optional)
- 1 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
Other Ingredients:
- 250 grams egg noodles
- 1 tablespoon crushed garlic
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
- 200 grams julienne stir-fry vegetables (sliced peppers, red onions, spinach, butternut & carrot batons)
- 1 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
- ¼ teaspoon salt
- Drizzle of honey
- Sesame seeds for garnishing (optional)
Method:
- Rinse & cut the beef into small strips & place them into a bowl.
- To the beef, add in ½ teaspoon salt, chili flakes & corn flour/starch. The cornstarch helps the beef brown easily on the outside & keeps it juicy on the inside, plus it helps thicken the sauce.
- Thereafter, add in the light & dark soy sauce. I got these from Gorimas.
- Mix everything well & set aside to marinate until ready to use.
- Next it’s time to prep the noodles. I got the Fresh Egg Noodles from Woolworths so I don’t need to cook them beforehand.
- Heat the vegetable oil & sesame oil in a wok or wide pot on medium heat. Once heated, add in the crushed garlic. I am using the 34cm Schumann Pro Wok.
- Mix the garlic in the oils & allow to simmer for 1 minute.
- Thereafter, add in the marinated beef.
- Give it a stir & allow the beef to cook for 4 minutes.
- After 4 minutes, add in ¼ teaspoon salt & a drizzle of honey. More salt needs to be added (a part from the marinade) as the noodles will be going in as well. The honey balances out the soy sauce.
- Next, I am using the Julienne Stir-Fry Vegetables from Woolworths which has sliced peppers, red onions, spinach, butternut & carrot batons – I found this more convenient to use but feel free to cut them from whole or add any other veg.
- Add the vegetables to the beef.
- Give it a stir.
- Cover with a lid & allow the vegetables to cook for about 8 minutes or until almost soft.
- Give it a quick stir.
- Add in the Egg Noodles – like I said, these are fresh noodles so there’s no need to cook them beforehand.
- Add 1 tablespoon of light soy sauce & 1 tablespoon of dark soy sauce.
- Mix until all the ingredients are well combined.
- Allow it to simmer for 3 minutes to infuse flavours.
- After 3 minutes, remove from the heat & plate.
- Garnish with sesame seeds (optional).
- This Beef Chow Mein is absolutely delicious & can store in the refrigerator for up to a week (that’s if they can last that long because in my home this dish gets completely wiped out lol).
