AIR FRIED CHICKEN SKEWERS
This Recipe Makes ± 7 Skewers
Air Fried Chicken Skewers is so easy to make in the Air Fryer. These come in so handy when you have those lazy days but still want something quick & delicious to eat.
I have opted to using my Instant Vortex Air Fryer for this recipe but if you don’t have an air fryer then feel free to pop them into your oven or simply braai them.
With this recipe, you can also tone down or up the spices according to your taste.
Air Fried Chicken Skewers Ingredients:
- 6 chicken breast (or thighs if available)
- 1 teaspoon salt
- ½ teaspoon cracked black pepper
- ¼ teaspoon turmeric powder
- 1 tablespoon Za’atar blend
- 1 tablespoon dried or fresh parsley
- 2 tablespoons ginger & garlic paste
- 1 ½ tablespoons chili powder or masala
- ¼ cup plain yoghurt
- 2 tablespoons butter or margarine
- handful of chopped mint
Method:
- Rinse the chicken & place onto a chopping board.
- Cut the chicken into small pieces & place into a bowl.
- To the chicken, add salt, cracked black pepper, turmeric powder, Za’atar blend (this can be found at Woolworths), dried or fresh parsley, chili powder or masala & ginger & garlic paste.
- Add in the plain yoghurt.
- Mix well using your hands.
- Allow the chicken to marinate for 30 minutes to amplify the flavour – if you do not want to wait, simply skip the marinating process, it will still turn out delicious.
- Finely chop up the fresh mint.
- Add the butter or margarine to a microwave safe bowl.
- Add the chopped mint to the butter or margarine.
- Heat in the microwave for ± 20 seconds or until melted. Set this aside until ready to use.
- Next, bring out the skewers. Cut them a bit shorter so that they can fit in your air fryer – if the oven is being used then there is no need to shorten them.
- Thereafter, push each of the chicken pieces into the skewer. If some pieces are in strips, they can be pushed from one end, folded over & into the skewer with the other end. (Check video below for a more detailed view).
- Continue this process until all the chicken are in the skewers.
- Place the skewers into the air fryer basket.
- Be sure to place them side by side rather than one over the other.
- Press the “Air Fry” button on the Instant Vortex Air Fryer. Adjust the “Time” to 00:20 (20 Minutes) & the “Temperature” to 180° Celsius or 356° Fahrenheit. There is no need to Preheat the Air Fryer.
- After 5 minutes, when the Air Fryer reads 00:15 (15 minutes), remove the basket from the Air Fryer.
- Brush some of the mint butter over the chicken skewers.
- Pop it back into the Air Fryer & allow to air fryer to continue the cooking process.
- After another 5 minutes, when the Air Fryer reads 00:10 (10 minutes), remove the basket from the Air Fryer.
- Carefully turn the skewers over.
- Brush more of the mint butter over the chicken skewers.
- Pop it back into the Air Fryer & allow to air fryer to continue the cooking process.
- Once the air fryer turns off, remove the basket from the air fryer.
- Brush over the remaining mint butter.
- Plate the corn as desired.
- These Air Fried Chicken Skewers go well with a side of fresh salad & rice, along with some sauce of your choice.
- They are absolutely succulent & will also go well with pitas & wraps.
