BRAISED YELLOW POTATO
This Indian Recipe Serves 3-5
Braised Yellow Potato is cooked using & fresh green chilies & turmeric powder instead of chili powder or masala. This dish is often eaten in most Indian restaurants with dosa/masala dosa or simply used as samoosa filling. It can also be enjoyed with roti’s, puri’s, soft white bread, parathas or rice.
Braised Yellow Potato Ingredients:
- 3-4 large potatoes
- 4 sprigs thyme
- ½ onion
- salt to taste
- ½ teaspoon mustard seeds
- 1 sprig curry leaves
- 2 tablespoons vegetable oil
- ½ tomato
- 3-4 green chilies
- ½ teaspoon cumin (jeera) seeds
- 1 teaspoon turmeric powder
- fresh coriander (dhania) for garnishing
Method:
- Get your potatoes out.
- Peel & cut potatoes into cubes & place into a bowl.
- Cover the potatoes with water to prevent it from oxidizing.
- Peel & chop onion.
- Rinse & slit the green chilies.
- Rinse & chop the tomato.
- Add the vegetable oil to a pot on medium heat. Add in the onions, green chilies, thyme, curry leaves, cumin (jeera) seeds & mustard seeds.
- Mix & allow to sauté until the onions are translucent.
- Thereafter, add in the chopped tomatoes & turmeric powder.
- Mix well.
- Cover with a lid & allow the tomatoes to cook for 5 minutes.
- After 5 minutes, the tomatoes should have softened.
- Next, add in the potatoes, discarding the water that the potatoes had been resting in. Add salt to taste.& pour in a little water.
- Mix well, coating all the potatoes in the spices.
- Notice how there is a little water, if you put too much in, it will result in mashed potatoes. It is best to add a little water at a time.
- Cover with a lid & allow the potatoes to cook for 15 minutes.
- After 15 minutes, the potatoes should be semi-soft. Pour in a little more water & gently stir.
- Cover with a lid once again & allow the potatoes to cook for 10 minutes or until soft.
- Once the potatoes are soft, give it a gentle stir. Stirring vigorously will result in mashed potatoes.
- The potatoes are cooked when a knife can easily go through them.
- Turn off the heat & plate.
- Garnish with freshly chopped coriander (dhania).
- This Braised Yellow Potato is ready to be served.
- Goes well with soft white bread, dosa, rice or rotis.
