Malva pudding is a sweet pudding which originated from the Cape Dutch. It contains apricot jam & has a light caramelized surface. A cream sauce is regularly poured over it while it is hot, & it is generally served hot with custard &/or ice cream.

It is of Cape Dutch root with numerous augmentations which may vary starting with one region then onto the next, e.g., ginger. It has numerous variations, for example, the Cape brandy pudding, which additionally incorporates liquor & dates, & the tipsy tart, which contains just cognac.

Method:

  1. Preheat the oven at 180° C.
  2. In a medium sized bowl, beat the eggs, milk, butter, & apricot jam together.
  3. Add in the flour, sugar & bicarbonate of soda. Mix well.
  4. Lightly grease a cake tin & pour the mixture in. Bake for 25 minutes.
  5. Whilst the mixture is baking, drop the sauce ingredients into a small pot & bring to a boil.
  6. Turn off the oven once the pudding is done.
  7. Pour boiling sauce over & leave to rest in the turned off oven for a couple of minutes. (The heat will ensure that the sauce soaks through the baked pudding, leaving it moist & sticky).
  8. Serve with a hot/cold custard.
