  10. Whilst the butter is melting, gently pour in the milk. The milk should be of room temperature.
  11. Whisk together until the butter & the milk are well combined.
  12. Gradually add in the flour & whisk continuously making sure there are no lumps.
  13. Whisk for about 10 minutes. It should form a thick sauce.
  14. Switch the stove off & then add in the grated cheese a little at a time – do not use all the grated cheese as you still need some for the topping.
  15. Once the cheese has melted in the sauce. Add in the cayenne or chilli powder.
  16. Mix well & add salt to taste.
  17. If the sauce is too thick, heat up some milk & add to the sauce.
  18. Next, gradually add in the cooked pasta, mixing in a little at a time so that all the pasta gets coated in the creamy sauce.
  19. When all the pasta has been coated in the sauce, you can top it with cheese & consume as is or for a more delicious dish continue with the next few steps.
  20. Empty the saucy pasta into an oven proof casserole.
  21. Sprinkle over the remaining grated cheese.
  22. Next I used the Panko Breadcrumbs.
  23. Sprinkle a generous amount of the breadcrumbs over the cheese – this will give the mac ‘n cheese the crispy coating.
  24. Now stick this casserole in the oven & broil for about 10 minutes until all the cheese has melted & it has a golden brown top.
  25. Serve immediately as the cheese will be all gooey & creamy.
  26. I served this dish with a simple lettuce & feta salad.
