Cheese sauce is a customary sauce utilized as a part of English cooking. The sauce is based upon white sauce, which is known as one of the ‘mother sauces‘ & cheese. It is could be viewed as an English likeness the French Mornay sauce (itself a variation of Béchamel sauce generally blended with half Gruyère & half Parmesan).

Homemade Cheese Sauce Ingredients:

Method:

  1. Grate cheese & set aside. I used Gouda as I didn’t have any other type of cheese on hand.
  2. Add the butter to a saucepan or small pot.
  3. Allow the butter to melt on medium heat.
  4. Once the butter begins foaming, turn the heat down to low.
  5. Add in flour a little at a time.
  6. Whisk the flour in as you add it to the butter.
  7. This mixture should form doughy lumps.
  8. Whisk this doughy mixture for 5 minutes without it burning. This will cook the flour.
  9. Next, add in ½ cup of cold milk. Make sure it is cold.
  10. Whisk well.
  11. This should form a thick paste.
  12. Add in another ½ cup of cold milk.
  13. Whisk well.
  14. This should form a semi thick paste.
  15. Finally, add in the last ½ cup of cold milk.
  16. Whisk well.
  17. This mixture should be of a weaker consistency.
  18. Add in a pinch of cayenne pepper or chilli powder. I used chilli powder as I didn’t have cayenne pepper on hand. Don’t worry, the sauce won’t be spicy, it just adds a bit of flavour,
  19. Whisk again.
  20. This consistency is not too thick & not too weak.
  21. Now for the cheese…
  22. Add the cheese in 3 additions like we did with the milk.
  23. So the first lot of grated cheese should be added to the pot.
  24. Whisk the cheese until it has completely melted.
  25. Add in the second lot of cheese & again whisk until it has melted.
  26. And lastly, add in the third lot of cheese & whisk again.
  27. Continue whisking for 2 minutes. The sauce should be creamy.
  28. Taste for salt as different cheese provide different salt content & add salt according to taste.
  29. Serve immediately with hot bread or steaks, burgers, roasted vegetables & more.
