Nuttikrust Copycat Biscuits are my alternative of the original Bakers Nuttikrust Biscuits (Cookies). These are a childhood favourite with that irresistible crunch to it. Having a blend of oats & caramel, this makes an awesome snack for everyone at any time of day.

Being South African, these biscuits are a must have in every household. I was craving these biscuits & decided why not try my baking skills in the kitchen & so I worked up this amazing recipe which tastes just like the original biscuits.

Nuttikrust Copycat Biscuits Ingredients:

  • 125 grams butter or margarine
  • 1 cup oats
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons golden syrup
  • ¼ cup milk powder
  • 1 teaspoon vegetable oil
  • ¾ cup castor sugar
  • 1 teaspoon caramel essence
  • 1 cup desiccated coconut
  • 1 cup cake flour or all purpose flour
  • 1 teaspoon bicarbonate of soda

Method:

  1. Firstly, preheat oven to 180° Celsius or 356° Fahrenheit.
  2. Line a baking tray with baking or parchment paper & set aside.
  3. Nuttikrust Copycat Biscuits
  4. Make sure that the butter or margarine is at room temperature.
  5. Place the oats into a blender.
  6. Add the desiccated coconut to the oats.
  7. Blend until fine, like a powder consistency – there may be few that won’t crush but that is fine.
  8. Add the butter or margarine to a mixing bowl.
  9. Add in the castor sugar.
  10. Using an electric mixer or wooden spoon & cream together.
  11. Next, add in the vegetable oil, caramel essence & the golden syrup.
  12. Mix well.
  13. Thereafter, add in the flour.
  14. Add in the milk powder.
  15. Add in the salt, baking powder & the bicarbonate of soda.
  16. Finally. add the blended oats & coconut mixture.
  17. Use a spoon & combine all the ingredients.
  18. Thereafter, use your hands & bring the mixture together to form a biscuit (cookie) dough.
  19. Pinch off small pieces of the dough.
  20. Roll into a ball between your palms & then roll into a log.
  21. Place onto the prepared baking tray & flatten slightly.
  22. Place the tray into the preheated oven & bake for 15 minutes until golden.
  23. Carefully transfer the biscuits onto a cooling rack. It will be tender & soft, but once cooled it will retain it’s shape & become crunchy.
  24. After a few minutes you can devour these Nuttikrust Copycat Biscuits.
  25. Store them in an airtight container for up to a month.
  26. Serve these Nuttikrust Copycat Biscuits with a hot drink such as coffee, tea, hot chocolate, Turkish coffee, etc.
